Recipe for Guilt-Free Lemon Chia Pudding

Looking for a light, refreshing dessert that’s easy to make and low in sugar? This Lemon Chia Pudding uses Saccharo® for sweetness with no added sugar needed. Perfect for breakfast, a mid-day snack, or a healthy after-dinner treat.

Ingredients (serves 2)

  • 2 cups unsweetened almond milk (or any milk of choice)
  • 4 tbsp chia seeds
  • 3 tbsp Saccharo® Sweetener
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • Fresh berries or fruit for topping (optional)

Method

  1. In a mixing bowl, whisk together almond milk, Saccharo® Sweetener, lemon juice, zest, and vanilla.
  2. Stir in chia seeds and mix well.
  3. Let sit for 10 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 2 hours or overnight.
  5. Top with fresh fruit before serving.
