Ask anyone to imagine a perfect Christmas meal and an image of a huge table laden with roast meats and other delightful treats galore.

But what if you having a Christmas meal for one? Fret not, for this delightful recipe will bring some cheer to the holidays with quick and easy pan seared chicken tenders with a side that will definitely be an upgrade to Christmas roast potatoes - fondant potatoes!

In the spirit of Christmas we are giving you not one but two recipes! So for those cooking a whole roast chicken, you can make these delicious fondant potatoes as well!

If you are unable to find unsalted chicken stock you can simply make it at home.

Simply blanch some chicken bones, feet, wing tips as well as any chicken off-cuts. Next, add the chicken parts into a pot with some roughly chopped onions, carrots and celery. You can add some aromatic herbs such as thyme and bay leaves. Cover with water and bring to a boil. After it boils, reduce to a simmer and skim the stock. Cook for at least 1.5 to 2 hours. Strain the stock and you can use it for any of your dishes. It can also be portioned out and frozen in the freezer for added convenience.
