Sugar-free Banana Oat Muffins Recipe

Looking for a guilt-free treat that’s crunchy, naturally sweet, and packed with nutrition? These Healthy Banana Oat Muffins are made with Sacha Inchi Seeds (rich in plant protein and omega-3s) and Saccharo® Sweetener (monk fruit sweetener). Perfect for breakfast, snack time, or even lunchbox fuel!

Ingredients (makes 10–12 muffins)

  • 2 ripe bananas, mashed
  • 2 cups rolled oats
  • ½ cup plain yogurt (or plant-based yogurt)
  • 2 eggs
  • ¼ cup coconut oil (melted)
  • ½ cup Saccharo® Sweetener
  • 1 tsp baking powder
  • ½ tsp cinnamon powder
  • ½ tsp vanilla extract
  • ⅓ cup Sacha Inchi Seeds, lightly toasted

Method

  1. Preheat oven to 180°C (350°F). Line a muffin tray with paper cups.
  2. In a large bowl, mash bananas until smooth. Add unsweetened greek yogurt, eggs, coconut oil, vanilla, and Saccharo® Sweetener. Mix well.
  3. Stir in oats, baking powder, and cinnamon until combined.
  4. Fold in toasted Sacha Inchi Seeds.
  5. Scoop batter into muffin tray. Bake for 20–25 minutes until golden and firm.
  6. Let cool slightly, then enjoy warm or pack for later!
