Ingredients (makes 10–12 muffins)
- 2 ripe bananas, mashed
- 2 cups rolled oats
- ½ cup plain yogurt (or plant-based yogurt)
- 2 eggs
- ¼ cup coconut oil (melted)

- 1 tsp baking powder
- ½ tsp cinnamon powder
- ½ tsp vanilla extract

Method
- Preheat oven to 180°C (350°F). Line a muffin tray with paper cups.
- In a large bowl, mash bananas until smooth. Add unsweetened greek yogurt, eggs, coconut oil, vanilla, and Saccharo® Sweetener. Mix well.
- Stir in oats, baking powder, and cinnamon until combined.
- Fold in toasted Sacha Inchi Seeds.
- Scoop batter into muffin tray. Bake for 20–25 minutes until golden and firm.
- Let cool slightly, then enjoy warm or pack for later!
